Gluten free peanut butter cookies - Recipe Wednesday

I am a celiac! This means that I can't eat wheat. So pretty much every yummy food is excluded from my diet. *No Oreos*sniff*
Anyways, I got this recipe from my grandma (also celiac) and they are actually pretty good. Also, excluding gluten (wheat) from your diet is really good for you too

Ingredients:
2 cups Peanut Butter
2 cups sugar (1 cup brown sugar, 1 cup white sugar)
2 eggs
1 tsp baking soda
dash salt
1 tsp vanilla
(Chocolate chips optional)

Method:
Mix well and roll into balls. Using a fork flatten your peanut butter balls onto cookie sheets lined with parchment paper. Bake at 350º Fahrenheit or 178º Celsius for 10 minutes.
